What is the difference between cake flour and all-purpose flour?

One of the differences is the protein content. Cake flour has a lower protein content than all-purpose flour. The protein content of flour helps the ingredients to be bound together. The more protein content of flour the more dense the cake will be. Cake flour is best to use in making cakes with a soft and fluffy texture.
All-purpose flour as the name suggests is all-purpose, you can use it in almost any baked product, there is a difference in their texture though as cake flour has a lower gluten content of protein.
