What is buttermilk?
The name of buttermilk is misleading because it does not contain milk in it. Traditional buttermilk is the leftover churned whole milk. Churning is the process of mixing milk or cream vigorously to make butter. The name has nothing to do with the milk but the process of how it’s done. Scientifically the process is called centrifugation and the butter is the fat in milk.
Natural buttermilk has a tangy flavor that some people like as a refreshing drink. The acid of buttermilk encourages the baking powder or baking soda to rise lighter and higher on the baked goods.
As of the moment, modern buttermilk is a fermented dairy product. It is created by fermenting a low fat or pasteurized milk and lactic acid is also added. The lactic acid in buttermilk prevents unwanted bacteria from growing that extends its shelf life. It has a slightly sour taste which is a result of a fermented lactose

What is the difference between milk and buttermilk?
Buttermilk is made from milk. Although they are both beverages there are differences in terms of nutritional content and taste. Buttermilk is a bit sour and tangy and it is a fermented beverage. Unlike milk, it is a liquid produced by the mammary gland and consumed as a beverage. Buttermilk and milk are both low in carbohydrates and the carbohydrate contents of those two are both sugars. They are both rich in vitamins and minerals but the calorie content of buttermilk is lower. Buttermilk has lower lactose than cow milk, so some people who are lactose intolerant are able to drink it.
Homemade Buttermilk Recipe
In this recipe you will need two things:
- 1 cup of milk
- 1 tablespoon lemon/white vinegar
Just mix the two ingredients and let it stand for 5 minutes.
There are a variety of reasons why someone would want to substitute buttermilk, whatever the reason is, you can always make a homemade buttermilk that will fit your needs and lifestyle. Here are the options that you can choose.
Dairy based buttermilk
- Cream of Tartar + Milk
To make buttermilk add 1 ¾ teaspoon of cream of tartar to 1 cup of milk.
- Yogurt + Milk
To make 1 cup of buttermilk, just add ¾ cup of yogurt to ¼ cup milk.
- Sour Cream + Milk
Add ¾ cup of sour milk to ¼ cup of milk
Non-dairy based/Soy based/Vegan based buttermilk
- Soy Yogurt-
To make 1 cup mix ⅔ soy yogurt with ⅓ of soy milk and blend until smooth.
- Tofu Buttermilk-
Using a blender, puree silken tofu with something acidic(lemon, vinegar). Blend ¾ cup of water until smooth.
- Coco Buttermilk-
You will need 1 cup of coconut milk and 1 tablespoon of acid. Mix it all together and let it sit for 5 minutes. Can be kept in the fridge for up to 1 week.
